Escargot, Leek, and Roasted Tomato Vol au Vent – Puff pastry shell stuffed with escargot, leek, roasted tomato and Pernod cream.

Moroccan Pheasant B’stillas – Delicate layers of pheasant, almond, spice, ginger and cinnamon placed between layers of Phyllo dough.
